The only one I've memorized:

There are good ships and there are wood ships, the ships that sail the sea,
But the best ships, are friendships, and may they always be.

Might seem simple, but I've used it in large groups and it always gets a cheer at the end. I wouldn't bother remembering a toast I couldn't use in mixed company.
