Hey everybody, I'm a newbie so I tend to be on the ultra-cautious side. With that being said, what are you guys' thoughts on wort sampling both in the primary and secondary? How often, if ever, do you do it?
 
Just when I transfer. From kettle to primary, from primary to secondary, and from secondary to bottling bucket/keg. The only exception is when I have a flavoring agent in the secondary such as hops or oak chips or chilis and I want to rack it off at a specific flavor profile.
 
I sample the wort when it goes into the primary and when I transfer. If the ferment seems to be stuck, I'll draw additional samples, maybe every other day. If I'm dry hopping in the secondary, I might draw a sample after a week to check hop levels.
