My Saison on Wyeast Saison yeast fermented out from 15 Plato (1.060) to 1.8 Plato (1.007) in just 2 weeks!

Is it theoreticaly posible? Or maybe my yeast mutated somehow?
The slurry was repitched from previous batch, that one fermented only 75% in 3 weeks...

The beer looks good, smells good, tastes good... I will give it a week more on secondary, an we shall see how it turned out.

Absolutely. The yeasties know how to do it, all it takes is the right conditions.

It was probably the fact that you repitched. Yeast ferment well when there's a LOT of them, if there are sufficient sugars and if they're at the right temperature.

Note to self: make mega big old starter for next Saison! :)

Wait, utlil I try the beer, the results may be dissapointiong. I've heard that belgians you should pitch low, to encourage yeast growth and hence ester production.
