Im about to try my hand at a strawberry wheat beer, and wanted yalls opinion on my method. I'm using a basic wheat recipe that I've used before and is quite delicious.
For my strawberry flavoring, I have just picked 8lbs. of fresh strawberrys from a farm here in middle Georgia. My plan was to make a homemade extract using this method. I am then planning on adding the extract to the crash-cooled beer after a few weeks of initial fermenting. This allows me to ensure a minimal chance of contamination and I believe would also avoid having an overly dry beer by not letting the yeast attack the added fruit(bc it has been cooled).
Does this sound viable? Am I missing anything or is there a better method out there?
