I bought all my supplies for two lagers I'm brewing this weekend. I made a huge starter from a vial of WLP820, before I realized that the vial had expired at the end of Feb. That was Thursday and it is just starting to show activity now, 36hrs later. Should I just get a new vial of yeast or will this be healthy enough once it gets going faster to do the job right?

You could pull a small sample of the starter liquid and taste it. If it tastes OK I'd say you're good to go. The fact that the starter was fermenting means the yeast are probably OK. Tasting it will tell for sure.
