My standard IPA grain bill is simple
93% two row
3.5% crystal
3.5% other specialty (victory, biscuit..etc..etc..)
Typically :
13# two row
8 oz C40
8 oz victory
So now I am thinking of keeping my ratios all the same, and twisting things up to add depth of flavor and create new beers. I was thinking about this sort of grain bill
13# two row
8 oz special B
8 oz chocolate
As you can see the ratios of malts are all the same, but we will be at about 22 SRM with this one. I would hop it with C-hops like most AIPA's would be......
Any opinions on this? I am wondering if all that chocolate will be a little two bitter or acrid without more cystal sweetness to balance.
