Using common extracts for soda?

Hey, I am new and actually making my first batch of soda tonight of the "Old Fashioned Home Brew" Ginger Ale. It got me to thinking though...can I just get some normal plain jane extract and make soda? I mean theoretically I could get some McCormick Pure Vanilla Extract and make some 'Vanilla Soda'?

I tried the vanilla thing a few times in small batches using my 1 gallon keg. Never really got anything that I thought was worth drinking. I am still working on it from time to time,...
 
I'm gonna experiment with different extracts. I would really like to get a mint julep soda going because I am a mint fan. Any pointers on a website to buy good quality extracts?
