Does anyone have a recipe for the Ed Worts Afpelwein using ale yeast? Do you still add the 2lbs of corn sugar? Basically looking for a slightly sweeter version.
Thx

Read into the thread a little ways, about 5-8 pages in a fellow did a batch using brown sugar and Nottingham ale yeast rather than corn sugar and wine yeast. I did his recipe and it looks to be turning out quite nice. I also added 5 cinnamon sticks to the fermentor for added flavor, but was later told it may be too many. We will see. I have another month or so before I will even sample mine.

Someone in there also posted about using several different types of yeast and liked a wheat bear yeast the best. I've made that version (only 1 lb of corn sugar) and really liked it; more like a cider and less kick.

2.5 gal juice
1 lb of brown sugar
1 packet Nottingham dry ale yeast.

Will this be less dry than the original recipe? How did yours turn out?
