I have an 80 quart pot that I use for crawfish boils and 2 30 quart pots that I use for brewing. All 3 are 4 mm. and after 6 years of use I have no complaints.

6mm??

I know you're not joking, but dang! That's almost 1/4" thick!! It just seems slightly on the ridiculous side, but I use SS kettles, and 1.5mm is considered THICK - 6mm, Ohmygawd!

Aluminum is quite definitely easier to machine, though. :)

Unless you have a Sampsonite gorilla living in your brewing area, I would go with the 4mm thickness one. I have one of those cheapie 7.5 gallon AL turkey fryer and I managed to drop it from 3 ft half full of water onto the deck and it barely put a dent in it.
