Has anyone had the opportunity to make a pure Pippin cider. I just got the line on a bunch of Pippins and want to press them up in the next couple of weeks. Just wondering if they will hold their own or if they need to be mixed with another variety after fermentation.
 
If they are like East Coast Pippens (tart like a Granny Smith, but a little more flavor in the midrange), you will probably want to mix them with something a little more flavor up front - Pink Lady, Stayman, Northern Spy, Cameo would all be good
 
I had a bottle of Royal Pippin from Abermarle ciderworks,a few weeks ago,it was very good. It was the only bottle I bought out of the 4 tastings offered. I am pretty sure it was just pippins.
