Looking for a one gallon Braggot recipe. I want to try a Braggot but I'm having a tough time getting a ball park figure for fermentables for a one gallon recipe. Would one pound of Honey and one pound of DME work? Or should I go lower. Looking for ABV around 6ish and to be able to bottle carb this without creating a bottle bomb.
 
Just looking at this from experience, and without any mathematical formula to back it up, I'd say that one pound each of honey and DME should put you in the 6-ish ball park. With proper fermentation management you shouldn't have any worries about bottle bombs regardless of your yeast choice.
