Wheat esters and bottle conditioning

So I took a sip of my dunkelweizen while bottling, which I fermented at 72. Not bad but overly banana. Do these esters mellow while conditioning/carbonating?

I've noticed that flaws can sometimes flocc. out with the yeast.This is why I like to put all my beer in the fridge after bottle conditioning for a couple weeks before really starting to judge it.
