In a couple of weeks, I have 11.5 gallons of cream ale that will be "ready".
While I don't have a regulator, I have rest of kegging equip.
I only have enough bottles for 1/2.
Could I keg the other 5g?
Basically let it age in the keg.
With no sugar or anything else to carb it.
Just to age it before I bottle and carb it.

Sure you can, but you should at least hit it with enough CO2 to seal it and to purge the oxygen out of it, otherwise you will get oxidation issues.
