Okay I know this is stupid, but I did a few minutes of searching with no result. How do I take a starting gravity? I guess the question is more of when, before adding the yeast or after? I take it in the primary correct, or before I transfer?

you can do it before or immediately after. Before would be preferable, but unless you are adding an absolutely HUGE starter it won't affect the gravity too much, and they aren't going to start converting so fast that it affects the reading.

Before you pitch is preferable, but if you forget it's not to late to take on immediately after.
