I was drinking some Ommegang last night and I was reading the label. they said it would be a good cellar-beer. That got me to thinking about trying to build up a modest beer-cellar. I have a case of Stone Epic 7-7-07, and I think I'll buy another bottle or two of the Ommegang.

What, in your opinion, are beers that are worthy of being put in the cellar to age?

I save a couple bottles of all of the Stone special releases. I generally save many barlewines. I have a couple years of Sierra Nevada right now. Generally the stronger beers are best suited for cellaring, but you can do it with just about any beer. Hops will fade over time, but as long as the light and high temperature are kept to a minimum, you'll do fine.
