Rack early or late

I'm making a hard lemonade. I'm wondering if It's better to rack to secondary early or late?

I will be away for about 6 days. Someone will be able to stir each day but not rack it.

I estimate it will be at 1.040 when I leave and about 1.018 when I get back.

It's currently in a bucket with a secure mesh on top for good venting

Rack later, but have them stop stirring. You can even airlock it so that it's protected if it does get lower than you think.

When would you suggest we stop stirring and air lock. Can we do that at 1.040?
