Rack early or late

I'm making a hard lemonade. I'm wondering if It's better to rack to secondary early or late?

I will be away for about 6 days. Someone will be able to stir each day but not rack it.

I estimate it will be at 1.040 when I leave and about 1.018 when I get back.

It's currently in a bucket with a secure mesh on top for good venting
 
When would you suggest we stop stirring and air lock. Can we do that at 1.040?
