Hey everyone! I'm brewing up a Kolsch tomorrow and I'm using Wyeast Kolsch Ale yeast. I am plannng another brew the following week and need the same yeast. Has anyone successfully collected and stored yeast at high krausen? Please advise... :mug:

Do you just simply skim the krausen off and place it a mason jar with sterilized water? How much do I need?
 
i skim all of it off into a sanitized jar since it's all yeast there is no washing involved.
 
i've done it both ways; boiled then cooled water and just the krausen. with the water it's easier to swirl the yeast around before dumping.
