Forgive me....but I need someone to explain the conecpt of mashing in/out in the brewing process?

There is no better reference in my opinion.

Search works great too! We have muliple threads on this--some have a nice link for a step-by-step site for an AG brew session with pictures. It was my bible for my first one. I'll post a link when I get a sec.
 
Mashing converts the starches in the grain to sugar. Raising the temperature (Mashing Out) then stops the convertion. reducing the risk of releasing harsh tannins into the wort.
