I'm doing my second Winexpert kit, and just completed Step 3 last night: racking to a carboy, adding metabisulfite, sulfate, and clarifier as per the directions, and degassing. I also added an additional 1/4 teaspoon of metabisulfite as per the directions in Step 4 since I intend to age the wine for at least six months.

Will I be OK adding the extra metabisulfite now? Will I need to add more after I rack off the clarified wine to another carboy, or is it fine for bulk aging as is?
