I am having trouble deciding what to brew next. Instead of narrowing things down I decided to open things up by asking the board for suggestions. My original intention was to make a pale ale with a Gumballhead like hoping schedule. I just made an american wheat with amarillo and want to do something different.

This is the list of ingredients I have on hand and which ingredients it must include.

Must include
6 lbs Gold LME
US-05

Optional extract
3 lbs Briess Golden light DME

Optional grains
1 lb Carapils
8 oz Special B
8 oz CaraMunich
1 lb Crystal 10L
8 oz Crystal 60L
8 oz CaraRed

Optional hops
Amarillo 6.9% 14oz
Northern Brewer 8% 1 oz
Perle 5.4% 4oz
Centennial 8% 4oz
Hersbrucker 3% 5oz
Cascade 4.7% 6oz
Sorachi Ace 10.8% 8oz
Tettnang 3.9% 2oz
 
I am planning a Belgian IPA with Sorachi ace.

I was hoping for a few more suggestions but that's cool. I will figure something out. I know the yeast is pretty limiting. If I had 1214 and some candy sugar I would make a dubbel.

8 oz 60L Crystal

1.5 oz Perle at 60
1 oz Tettnanger at 30
1 oz at flameout

Ferment at the low end of the US-05 temperature scale to suppress esters and bulk-store (lager!) for a few weeks before packaging.
