I was at Lowes today, and stopped by the mini-fridges. I think I found the perfect fridge, just curious with anyone has used it or looked at it too...

They don't have an internal picture online, but there are two glass shelves that pull out. The cooling element is inside the walls, with just 2 screws holding the freezer door hinge, also blocking it so the insulating shelf between the freezer and fridge sections doesn't come out.
Internal dimensions were 28" tall, 18" wide, and ~8" (estimating) deep before the hump. May have to modify bottom lip of door shelves, but I didn't spend enough time to get a good measurement.
