I brewed a brewers best wheat kit march 2
bottled it on march 20
I added a 4 0z bottle of watermellon extract
Will this mellow out with time ?
it tasted like watermellon rind

I have 46 bottles of this i hope it mellows out i can not see myself drinking this
some body tell it will get better :)
 
In the future use less before u use more on the extract until u get it to the taste u like, but conditioning should mellow it out some
 
One of my mates just recently brewed a watermelon wheat as well. He actually used the fruit and just scooped out all the insides, put them in a blender and added it to the wort (try to keep everything sanitized!). I think he used 2 melons for a 5 gallon batch.

result: pretty good, nice subtle watermelon flavour coming through the sweetness of the wheat beer.

Especially good on hot summer days in the sun :drunk:
 
I would definitely use real fruit as opposed to extract anytime possible. IMO its a world of difference flavor wise
 
I will just let it condition another month
hopefully it mellow out
lesson learned
