I was at our local Rock Bottom brew/rest. The brewmasters special was an apricot wheat. Man was that tasty! A classic quenching american wheat with a hint of fruit.
AF stands for "all fruit". I didn't want extract or canned puree so I finely diced dried apricots dumped them into a freezer bag with water in the hopes of somehow re-hydrating the dried fruit. Overnight in the fridge it sucked up the water.
I stewed the cooties out of the orange slop and I've now racked my wheat on top of this sludge.
I used a ratio of 12 oz of fruit per gal. figuring I'd need less than whole fruit. Just a guess.
This has a dash of acid malt to hopefully balance the fruit.
