Quick question. When making cider, when the fermentation is slowing down usually after about a 2-3 weeks i rack into secondary. When it is in the secondary more sediment/yeast drops out of solution. Is it ok for the cider to sit on sediment for aging (4-12 months) or should the cider be re-racked? Thanks
 
I've left cider for two years after racking ot off the first time without problems. There was very little lees on the bottom of the carboy. If you rack early you might want to do it again. I'd cold crash it and then rack it...there shouldn't be much left
