Using ebay temp controller for mash control

So im working on a project to convert one of theseFryer to use as a temp controlled heatstick for my mash (still use propane for the boil).

Ive managed to take it apart and successfully wire it so that i dont need the built in controller (as it was not accurate enough with the temp holding).

What I want to do now is wire the ebay temp controller I have up to it (easy enough) but Im wondering about the temp probe and if I can make it waterproof or where i can get a replacement that is waterproof
