I making a weinhenstephaner clone (wheat beer with special weinhenstephaner yeast), fermenting around 68-70 steadily, and it fermented like crazy (blowoff needed) like most hefe's but the kraussen has yet to receed and it's going in to day 9. It receeded some but for 5 days or so its been about 2-3 inches thick and looks like brown brains. I thought it would had settled out by now. Am I mistaken? Can the kraussen stay up top for too long? Oh and one more thing. When I put the wort into the carboy, I topped it off with 1/2 a gallon of spring water to bring it up to the 5 gallon mark but now its at about the 4.7 gallon mark. Does the settling of the break/trub and all that reduce the volume of beer?
