I'm going to be starting the Brewhouse Cream Ale shortly. I am wondering if there's a better yeast to use with that instead of the included Coopers yeast? I've seen some posts where people have mentioned using Nottingham yeast instead. Would that be a good choice for this?

I'd suggest a pack of rehydrated Safale US-05. Nottingham would work too, just try to ferment on the lower side to reduce esters (mid to high 60s).
