You could, and you would probably get a good beer, but it would not be a hefeweizen. The yeasts that are customarily used for these two styles are remarkably different in the phenols they produce (clove for the hefe, peppery for the wit) and esters (banana for the hefe, citrus and other fruits for the wit). So if you're hoping to get the standard clove and banana that most hefeweizens are expected to have, you need to use a German weizen yeast.
