1 gallon cyser questions?

I'm doing a cyser experiment... I 3 1 gallon batches going all with 2lbs of honey and different juice. what my question is with one gallon batches would you rack it to a secondary my fear is that i will lose to much and if i do rack it can i just top it off with juice
 
I kind of figured that but better safe then sorry...this is my first time making a cyser i don't even know what it will taste like i used champagne yeast so i know it will come out dry... i've made edwort's apfelwein before is it similar to that.
