Hi all,

I'm making a Flemish red this week and I bought a smack pack of Roselare. It is kinda old...Sept. 2011. I've read on the forums that you shouldn't make a starter with this blend, but I'm worried about the vitality of the sacch yeasts. Should I make a starter? Or should I pitch a packet of US-04 along with the smak pack?

Any input is greatly appreciated.
