I have seen it referred to as a style of malt and a characteristic. I have tried to look for an explanation, but to no avail. Can someone please explain "biscuit" to me? Thanks.
 
Biscuit malt is a Belgian malt that gives a "bready" aroma to brews (when used in moderation). [It is very similar to Victory malt but less "nutty" in flavor.] Kind of a toasted bread taste. It imparts what some use the term garnet color -- a clearish, redish, brownish, rich color. I would experiment with a half pound or more to get to know this grain.
 
Biscuit malt gives a fresh bread/biscuit flavor to your brews. I think you find it more in english style beers more than american styles. I just used a half pound in a 1.063 english ipa and it gave a subtle bready flavor to my beer, I'll likely use .75 pounds on the next brew.
