So I've got Northern Brewer's Extra Pale Ale kit lying around in the brew queue, and I'm thinking I might want to brew an IPA instead. It's got 6lbs. LME, 1lb. Dingemans carapils (Cara 8, I think), and 3oz. Cascade.
I'm thinking about turning it into a partial mash Sierra Nevada Anniversary-style IPA like this:
5-gal batch:
6.0# light LME
2.5# 2-row pale
0.5# munich
1.0# Dingemans carapils
0.5# crystal 60L
1.0oz Chinook (60min)
1.0oz Cascade (15min)
2.0oz Cascade (dry hop)
Safale US-05
Any thoughts? Should I drop or reduce the carapils, maybe? Go with Crystal 40L since the extract will be dark? It'll be awhile before I brew this--there's a hefe ahead of it in the queue--but thought I'd bounce it off you folks first. Thanks!
