LYCHEE WINE
3 kg sugar
5 sweet limes juiced
500 gms raisins (white grape)
20 L lychee juice
Added a shredded piece of ginger after 15 days.
Steinberg yeast (thought it would keep the flavour smooth + i had it handy)
Yeast nutrient
Final Alcohol content 14%.
It is superb!

My friends liked the above wine so much that i tried to make it with wild yeast.
I had to add more ginger this time by public demand.
The result is something that cannot be described in words.
Culture the ginger over a 20-30 days by adding fresh ginger and a spoonful of sugar each day.
Add the other ingredients and follow through the regular wine-making process.
I would strongly suggest all to try it.

This last batch, was placed in the freezer for a while. The water froze leaving a very highly concentrated shot. Try this if you are adventurous. The ginger made a few people cough but they all wanted more in the end.
