how does a hombrew manifold works?

hi, how does a homebrew manifold works? I see it always closed, how does the wort enters that?
 
and why atre the slids placed facing down? isnt it more comfortable if.there facing up? also, how the homebrewer gets to disperse if the grains block the slids?

I use a false bottom...But i'd imagine the reason the slits are placed on the bottom is to deter the grains from clogging the slits.
 
And the heigh of the tubing would all be liquid lost so better suction effect from the bottom and better filtering as well
