Was going to make a stir plate from a PC fan and a 12v wall adapter, but then I was given a cooling fan that plugs strait into a wall outlet. Can I use a light dimmer to safely control the speed.
 
The dimmer should be fine. Just be safe with your wiring dont leave stuff exposed.

I've also seen wall plugs that let you switch between something like 1.5v, 3v, 6v and 9v at radioshack. I forget the actual voltage numbers but i think thats close, something like that might be worth checking out.

I think he is saying he has a 110v fan, not a 12v.

I think a dimmer would work just fine. But like Bearclaw said, make sure there isnt any exposed wiring. if 110v gets wet, your going to have a bad time.
