I have Wit that tastes a touch watery. I applied the CO2 to it last week to see if cabonation would help things along, but after another taste last night, it's not going to be where I want it. Is it too late to add some DME/MD to the beer in the keg to increase body?

Yes and no.

Don't add it directly.

But you can make a second strong version of the beer and blend them

you can definitely add malto-dextrin to the keg...add a couple ounces to a pint of water...dissolve and boil...cool and add to keg.

it will definitely add to the body and mouthfeel of the beer...the difference will be noticeable immediately. Repeat the process until the mouthfeel is where you want it. I've done this on a couple of occasions with beers that are a bit thin.
