I've heard a lot of good things about Galaxy hops. What type of beer should I use them in and should I use them for bittering, flavor or aroma?
 
I have not used them, but your post made me research them a bit. I think they would be great in an aipa or apa and would probably work great with hop bursting.
 
They are great in an Ale. Here is one I made which isn't over the top:

5 kg Maris Otter with .5kg malted wheat, 15g Pride of Ringwood for bittering (or use 10g or less of Galaxy) and 15g @ 10min and 20g @ 5 min of Galaxy and US05, made about 23.5 litres of beer 5.25% abv, OG 1.052 FG 1.012 – very simple. That is an excellent finishing hop!

It's an All Grain, so you may not be geared up for All Grain

I made an IPA with galaxy that was fantastic...

I hit the OG right on, but the s-05 took it all the way down to 1.010 :)

1 oz - Columbus (AA 14), Type: Pellet, Use: First Wort
1 oz - Cascade (AA 6) for 30 min, Type: Pellet, Use: Boil
1 oz - Galaxy (AA 13) for 15 min, Type: Pellet, Use: Boil
1 oz - Galaxy (AA 13) for 10 min, Type: Pellet, Use: Aroma
1 oz - Galaxy (AA 13) for 5 min, Type: Pellet, Use: Aroma
1 oz - Cascade (AA 7) for 7 days, Type: Pellet, Use: Dry Hop
1 oz - Galaxy (AA 13) for 7 days, Type: Pellet, Use: Dry Hop

MASH STEPS:
1) Infusion, Temp: 152 F, Time: 60 min, Amount: 1.33 qt, Single Infusion

OTHER INGREDIENTS:
1 tsp - Irish Moss, Time: 15 min, Type: Fining, Use: Boil

YEAST:
Fermentis / Safale - Safale - American Ale Yeast US-05
Starter: No
Form: Dry
Attenuation (avg): 72%
Flocculation: Medium
Optimum Temperature: 59 F - 75 F

PRIMING:

Not at all. I was expecting it to be more bitter, but it really wasn't. It was a smooth kind of bitter, probably due to the fwh vs. a 60 min. Addition. While it says 86 IBUs, it taste more like 50. I've got another 5 gallon batch of it that I just dry hopped last night. My first recipe and so far, my best brew I've made.
