Is there a good cider book anywhere out there? One that starts basic, and progresses to the scientific side hopefully?

Also: I am making my first batch of cider presently, it is currently about 22hrs into the primary fermentation.
From reading some other people's recipes on this site I've realized that the amount of sugar I used was nowhere near enough to create the ABV I'm looking for, and as such I want to add more. Considering that the cider is already in sterile carboys and sealed with s-locks, what would be the best way, if any exists, to add some more sugar at this phase?

Yeah, I made a beer once where every day I added a 1/2 cup of caramelized sugary syrup, which involved removing the airlock and pouring it in, for 2 weeks, no infection. Should be fine unless you sneeze in the carboy or something
