ok, this is just a thrown together batch of about 2 gallons of concord and a gallon of white grape juice, and yeast, but I do want to puy in some oak chips to simulate barrel aging. any idea how much oak and how long to age?

Well, in 5 gallons I used about an ounce of French oak chips in my blackberry. I only did it for about a month, and it wasn't quite enough. Still, I would recommend checking it often if you decide to do it. It'll go from underoaked to way to much oak in a very short period of time. Just do frequent taste tests and rack it off the oak chips when it's about right.
