using DME- boil till it "breaks"

My friend is a extract brewer, I've only done AG. When he brews he adds all the DME at the start and then lets it boil while constantly watching it go up and down until it stops foaming/raising which he refers to "breaking it"- this takes 45-60mins.

I'm not familiar with this approach and I've read where most extract brewers will add most DME with 20mins left to sanitize, so they aren't concerned with "breaking" the DME?

Can someone clarify this, what am I missing between the two methods?
 
I got a wild hot break from DME only once. It was a pound of plain wheat DME we added to a batch my wife was brewing. Took 3 minutes to stir it down. The hot break always happens right before it boils. We do partial boils of 2.5-3 gallons,usually with half a 3lb bag of plain DME for hop additions. Remaining DME & all LME at flame out.
