I thought I was just about done with my Belgian Trippel and need the tap for my Blue Moon clone that I want ready to drink by Thanksgiving. So I poured what I thought would be the last glass but it wasn't, so I disconnected the keg anyway. When I lifted it, it feels like there is maybe almost a gallon left. Other then just drinking it which I am not going to do, what harm in taste would come to the Belgian if I just set it in the closet for a few weeks and then hooked it up to the tap again? So basically it would go from 38 degrees to around 70 and then back to 38.
Would I be better to dispense all of this into containers like a growler and put it in the frig? I really don't have the space for that much beer with 2 turkeys in there though!
