Hey everyone,
I was able to get my hands on some late harvest unpasteurized cider this year so I decided have a go at my first batch of hard cider. I bumped up the gravity by adding about 4 lbs of dark brown sugar for the 5 gallon batch. it came in around 1.085 and I used WL 775 cider yeast. It took a few days to get going because I dosed it with potassium sulfite but after a day or two it started fermenting nice and strong and after about 4 or 5 days seemed to be slowing down. Then all of a sudden, after it seemed the primary fermentation had halted, I started seeing the airlock going crazy again. Has anyone ever seen this? I'm guessing its not a bad thing, I would just like to know if its normal.

I have seen this happen a few times while brewing beer.
I put it down to fluxuations in temperature. Where we dont really notice if it gets one or two degrees colder, the yeast does and slows down. Once it gets slightly warmer it speeds up again.

This is just a guess from what i know about yeast, there maybe a completly differnt reason for it that i dont know but thats what i put it down too.
