Fruit beer - peeling peaches?

I'm brewing a Peach Wit and I want to know if I need to peel off the skin of my peaches or not?

My recipe says yes, but doesn't the skin have a flavor/aromas? I want to collect the more flavor/aromas I can get, so I was about to leave the skin on... :confused:
 
If you leave the skin on, you'll get off flavors and it will be harder for the yeast to get at the fruit's sugar.

Use a potato peeler.

You should take the stones out for the same reason.
 
If they are ripe, drop them in boiling water for 1-2 minutes (before you cut them up)---the skin with just about slide off. Much easier than peeling.
