I have been noticing a loss of flavor in our beer after a few weeks. I'm sure brews will continue to mellow but how can I better "Lock" in flavor. Is it a matter of overcompensating for the flavors you want to retain?
We bottled a honey brown that was awesome a few weeks ago and now they are kind of tasting bland.
