Brewed up a 1.082 christmas ale this past saturday. It fermented like crazy in my ferm chamber (sitting between 65 and 68f the whole time). The chamber is in my garage, and even though we've had some nights in the low 40s here, the temp stayed pretty steady. Airlock/blow off activity has slowed as of last night and this morning I saw that temps are hovering around 59-60 degrees in my chamber. I have a heat belt I could use, but I wanted to see if you guys knew about this yeast and how it reacts in 58-62 degree situations. Should I ride it out or strap on the heat belt? TIA.
