Can I simply subsitute brown for choc malt when brewing an American brown ale? What will the difference be in the taste?

I'm afraid you not; chocolate and brown malts taste entirely different. I've used brown malt a few times and it's more dry dark bread crusty/walnutty flavor opposed to the chocolates from chocolate malts.

Sam Smiths Taddy Porter is one of the more accessible beers that use a fair amount of brown malt. Grab on of those to get a better idea of brown malt flavor.

I've used a fair amount of brown malt in two different beers and love it; both were brown ales, one actually took a gold in category.
