I just purchased what I thought was Carafa Special II that I plan to use in an altbier. When I got home I realized that it was the regular Carafa II (husk intact). The recipe calls for 3oz in a 5 gal batch. Will I be fine with using what I have or should I buy the Carafa Special II? Thanks.
 
One way to get color without much roast is to add this Carafa II at sparging instead of mashing it. This will decrease the roast contribution. The other possibility is cold steeping it. Do either of these, & I think you'll be fine using it instead of the Carafa Special.
