First time kegging

So I am force carbing right now at 10 psi on a Special Bitter, after 2 days ill bump it down to 3 or so psi since the style doesn't need to be highly carbed but my question is do I just leave it at 3 psi until the keg is empty or do I turn off the gas after a while so that I don't over saturate the beer?

At 3 psi, the beer won't be carbed much at all. I'd probably keep a bitter at 5 psi at 40 degrees, for a carb level of 1.83 volumes.
