Ok, Im using a used oak barrel (5 gallon) I got from Farmhouse. I think it had a rum like liquor in it before. I dumped about a gallon of rum in it before I transferred my BW into it. Its now been in there for just over 2 weeks. I am now noticing a thick, maple syrup like ooze coming from the seams in the barrel. It tastes like oaked rum. Is this normal?

I'm thinking that the barrel is taking up the "angels" portion and kinda forcing out the rum liquor that was absorbed before. This is the first time I am using an oak barrel to age a beer.

Thanks

I have never done this but would like to know how it turns out.

Sorry to not be of any help but could you keep me posted on how it turns out?

I've had beer in mine for 2 weeks now and I don't see anything like you describe. I presoaked it with 1/2 gal of bourbon for a week and rotated the barrel daily. However, my beer is only about 5.5% ABV and the barrel is in my freezer at 48F.
