Anyone mess around with this? When in the beer making process do you add your coffee? How much do you add? I'm interested in making a coffee stout. Share recipes if you have them!

Most people will add coffee in secondary (or primary if they don't secondary). The two most popular methods are cold-extraction and dry-beaning. Look for threads on Founder Breakfast Stout and Wake N Bake for some recipe ideas.
